As in the case of black tea the motherland of green tea is also China. In Chinese tea has got hundreds of names, the most widely known of which is “cha” which means “a small leaf”. According to the legend, for about five thousands years ago the wind blew away some leaves from the bush of the wild tea, took them away and threw into the cup of Chinese emperor Shon Nong, which was full with boiled water. Having the drink the emperor admired the taste and the smell and was gifted with exceptional force and the ability of foreseeing. This is the way how the tea became known.
Green tea is well known for its biological peculiarities and for its unique taste. For its production it undergoes thermal treatment, that is, leavens disappear, which prevents the substances of the tea from soaring. That is the reason why green tea by its chemical structure is close to the natural one and the leaves are rich with vitamins. In other words, the main purpose of green tea production is to preserve the biological curing substances of fresh leaves. It is done so that these substances are able to separate easily in the tea-cup after being boiled.
There exist three main types of green tea: there are large-leaved, small-leaved, dust-like and flaky. The large-leaved has the best quality. All the green teas are advised to prepare in the water as hot as 60-90%. After the process of boiling the tea infusion can become from light to dark green or of the colour of greenish-yellow. Green tea is bitterer than the black one, especially when it is strong. That unique taste is accompanied with as much unique smell. People, encouraging healthy life-style, prefer green tea, as it contains catechine, an antioxidant. Green tea strengthens the resistibility of the organism, reduces the probability of cancer cells occurrence, prevents the process of obesity.
It is not surprising that green tea is called a drink of nuclear century.
